Chicken Pomodoro Pizza

Below you will find the tasty recipe I developed. All garlic and basil and fresh tomatoes and a drizzle of balsamic. You are going to love it. I am entering this pizza recipe into the Hodgson Mill Build A Better Pizza Recipe Contest.

The Crust
I have had a hard time finding a pizza crust recipe I like (especially wheat) I decided to give Hodgson Mill's wheat pizza crust. Who would know better than them. Here is what I loved. Easy recipe and it stretches out by hand easily into a 12" to 14" pizza. 


1 pkg Active Dry Yeast
1 Cup Warm Water (115 degrees)
1 1/2 Cups Whole Wheat flour
2 tsp granulated sugar
1/2 tsp salt
2 TB olive oil
1 1/2 Cups White Flour

Directions: Dissolve yeast in warm water and allow to rest 5 minutes. Stir in whole wheat flour sugar, salt, olive oil and 1 Cup white flour. Stir. Knead in remaining white flour by hand. Knead until smooth and elastic. 

Spray a medium bowl with no-stick cooking spray. Place pizza dough in bowl and turn to coat thoroughly. Cover and allow to rise for 15 minutes. Spray a 14 inch pizza pan with no-stick cooking spray. Stretch pizza to edges and fold edges over for crust. 
Top with toppings and bake in 425 degree oven until crust is browned and cheese is melted and golden.
The Toppings

Garlic white sauce -- Recipe below
5 chicken tenders
1 TB of balsamic salad dressing
1 1/2 Cups shredded Italian cheese blend
3 medium firm tomatoes
2 TB fresh basil, chopped
2 cloves of garlic, minced 
1/2 tsp olive oil
dash of salt
Balsamic Reduction sauce or balsamic vinegar.


Garlic White Sauce
It is all about the white sauce
1 TB butter
1 clove garlic minced. 
1/2 tsp of dried Italian Seasoning
1 TB of flour
1/4 tsp salt
dash of pepper
3/4 Cup milk
1 Tb shredded parmesan cheese

In a saucepan melt the butter over medium heat. Add minced garlic and cook for 30 seconds. Add italian seasoning. Stir in flour, salt and pepper. Add milk all at once. Stir until thickened. Add parmesan cheese. Stir until melted. You want it a little thicker than you would use for a pasta sauce. 

Pizza Directions:
Heat oven to 425 degrees.
1. Toss chicken tenders in plastic bag with 1 TB of balsamic salad dressing. Grill chicken until just finished. Cut into 1 inch pieces.

2. Spread white sauce on pizza.
3. Top with 1 cup of shredded cheese.
4. Top with chicken.
5. Top with remaining cheese.
6. Bake until crust is browned and cheese is melted. About 15 minutes
Meanwhile make pomodoro: chop tomatoes and mix with minced garlic and olive oil and a pinch of salt.

7. Remove pizza from oven and top immediately with tomatos and sprinkle with fresh basil.
8. Drizzle with balsamic reduction if desired.
